2011 CSA Bounty
On this page, I’m keeping track of what we got through our farm share this summer, along with some random, incomplete notes on what we did with all those glorious veggies and berries
Week 1 (June 21) – radishes, spinach
- Spinach salads
- Radishes for snacking
Week 2 (July 7) – Swiss chard, kale, strawberries, peas, lettuce
- Ate 1 pail of strawberries and froze the other half -(5 cups)
- Chard with kalamata olives & onions
- Swiss chard tzatziki
- Kale chips
- Lettuce salads
- Peas for snacking
Week 3 (July 14) – Swiss chard, strawberries, garlic scapes, peas
- Ate some strawberries with angel food cake and whipped cream
Week 4 (July 19) – Strawberries and raspberries – NO DELIVERY NEXT WEEK
- Made raspberry pancakes, strawberry cream cheese muffins
- Froze 5 cups strawberries
Week 5 (Aug 4) – Swiss chard, zucchini, red and golden beets, lettuce, thyme, red cabbage
- Froze chard, zucchini, beets & beet greens
- gave thyme and most of the lettuce away (going on vacation)
- took red cabbage home to Alberta for Asian coleslaw
Weeks 6-7 (away – M&R took care of it for us) - zucchini, chard, beets, cabbage, etc.
- M&R made pickled beets for us and blanched/froze the rest
Week 8 (Aug 25) – beets, Swiss chard, red cabbage, cukes, zucchini, tomatoes, tomatillos, carrots, onions
- borscht: beets, carrots, onions, cabbage, chard ribs
- latkes: zucchini, carrots, onions + storebought sweet potato
- beet leaves for beetniks
- froze the chard
- ate cukes & tomatoes fresh
Week 9 (Sept 1) – beets, Swiss chard, green cabbage, cukes, red & white onions, carrots, zucchini, green beans, tomatoes
- sauteed Swiss chard with garlic & chili flakes
- roasted some carrots with a chicken
- beans were tough and stringy – Kris says the weather wasn’t great for beans this summer
- A. loved the little tomatoes
- Killer Coleslaw with the cabbage
- beetniks
- beet salad with goat/feta cheese and candied nuts (x2)
- beetniks
- tomatillo salsa
- carrot sticks with swiss chard tzatziki
- cabbage, ham & potato hash
- gave red beets to Sue for canning
- grated & froze zucchini for baking
- made potato salad with the red potatoes & green onions
- ate carrots and cukes fresh with dip
- Turns out I only like red huckleberries — these ones were blue and they’re still sitting in the fridge uneaten
- roasted & froze the beets
- ate fresh tomatoes
- kebabs with potatoes, last week’s green peppers, red & white onion
- froze carrots to have at Thanksgiving
